Sip by sip - you might say that’s how Justin and Sarah Hummell are opening their new watering hole in Holly Springs.
The husband-and-wife team opened the doors to Sip Wine & Coffee Bistro (128 Bass Lake Road; 919-762-7143; sipwineandcoffee.com) on June 24. They’re already delivering on the liquid asset side of the ledger with an ambitious assortment of coffees (espresso, French press and Chemex), wines, beers (bottled and draft) and other libations ranging from chai latte to Ghirardelli hot chocolate.
But you’ll have to wait a bit before you’re able to check out the fig-and-prosciutto flatbread, turkey apple brie wrap, inside-out chipotle chicken salad, and other temptations listed on the website. These, along with Sunday brunch Benedicts, Belgian waffles and croque monsieur, are on hold pending Health Department inspection.
In the meantime, the food offering is limited to a selection of locally baked pastries and bagels from New York Bagel Deli in Cary.
Sip Wine & Coffee Bistro (which is not affiliated with Sip, the wine store in Cary) is open seven days a week. Check the website for hours.
