Sandwich Roll Call, Yes the list includes Peanut Butter

I will be the first to admit, I'm not a big fan of bringing sandwiches to work for lunch. This got me to thinking that I needed to do some reseach and up my "sandwich knowledge."

There are a lot of sandwich recipes out there but here are five that I plan on dropping into my lunch bag in the coming weeks.


Spinach and Artichoke Wrap

Salmon Salad Sandwiches(recipe below)

Crunchy Peanut Butter Wrap

Ham and Cheese Croissant

Egg Salad Sandwich

 

Salmon Salad Sandwiches

4 sandwich rolls
1/2 cup ranch-style salad dressing
2 6-oz. cans skinless, boneless salmon
2 small tomatoes
1/2 a medium cucumber
1 cup coarsely shredded carrots (2) or shredded, peeled jicama (1/4 jicama)


Directions
1. Split sandwich rolls. Lightly spread sliced rolls with some of the salad dressing. Drain salmon. Place salmon in bowl and flake with a fork. Add remaining salad dressing to salmon; mix to combine.

2. Thinly slice tomatoes and cucumber. Layer tomato slices on bottom halves of sandwich rolls. Top with salmon mixture, cucumber slices, shredded carrots or jicama, and roll tops. Makes 4 servings.

liven up a sandwich

I very highly recommend the "Sandwich sprinkle" seasoning by Penzey's - it takes a boring turkey sandwich and makes it SO much better! It really livens up just about any sandwich - it is fantastic.
