 <title>16 chefs will compete in Iron Chef-style contest starting June 11 in Raleigh</title>

&lt;p&gt;Crippen is the force behind the annual &lt;a href=&quot;http://www.competitiondining.com/&quot;&gt;Fire on the Rock competition&lt;/a&gt;, which started seven years ago in Blowing Rock. This year, Crippen teamed up with the N.C. Department of Agriculture&amp;#39;s Got to Be N.C. campaign to take the competition statewide. The complete list of pairings was announced today at a press conference in North Raleigh.&lt;/p&gt;
&lt;p&gt;Here&amp;#39;s how it works: Two chefs with the help of two sous chefs each prepare three courses for about 100 people using a secret N.C. ingredient that is only revealed on the day of the competition. The chefs, whose cell phones are confiscated, have about six hours to plan their menus and cook their courses. That evening, the diners and a panel of guest judges will choose the winning dishes, not knowing which chef cooked which course. The winning chef moves onto the next round. The overall winner takes home $2,000, while the runner-up wins $500.&lt;/p&gt;
&lt;p&gt;The public can buy tickets to the dinners. The cost is $49 excluding beverage, tax and tip for the preliminary rounds, and $59 for the semifinal and final rounds.  <title>Southern Season adds coffee bar, changes hours</title>

 <description>&lt;p&gt;Chapel Hill&amp;#39;s &lt;a href=&quot;http://www.southernseason.com&quot;&gt;Southern Season&lt;/a&gt; has opened a coffee bar and changed its hours to open at 8 a.m. instead of 10 a.m. six days a week.&lt;/p&gt;
&lt;p&gt;The store&amp;#39;s new hours are 8 a.m.-7 p.m. Monday-Thursday, 8 a.m.-9 p.m. Friday-Saturday and 10 a.m.-7 p.m. Sunday.&lt;/p&gt;
&lt;p&gt;The new hours allow customers to take advantage of the store&amp;#39;s new coffee bar, which is located just past the coffee and tea sales counters. The coffee bar has 20 different coffees, many from local coffee roasters: &lt;a href=&quot;http://counterculturecoffee.com/index.php&quot;&gt;Durham-based Counter Culture Coffee&lt;/a&gt;, &lt;a href=&quot;http://www.openeyecafe.com/carrboro_coffee/about.php&quot;&gt;Carrboro Coffee Co.&lt;/a&gt; in Carrboro and Raleigh-based &lt;a href=&quot;http://www.stocktongraham.com/&quot;&gt;Stockton Graham &amp;amp; Co. &lt;/a&gt;Plus, they have more than 20 different teas available for brewing.&lt;/p&gt;
&lt;p&gt;Coffee bar supervisor Reiko Tanaka explains that they offer drip coffee as well as individual cups of coffee brewed using fresh ground coffee and a coffee filter cone. For the latter, a customer can request any of the dozens of coffee sold in the store. The price difference is $1.65 for 12 ounces of drip coffee versus $2.25-$2.95.&lt;/p&gt;
&lt;p&gt;Southern Season became the gourmet food, housewares and mail order behemoth that it is today by starting out as a small store selling gourmet coffee. This may indicate a return to its roots but it also may be responding to a nearby coffee competitor. &lt;a href=&quot;http://www.3cups.net/coffee/index.php&quot;&gt;3CUPS&lt;/a&gt; has been offering coffee brewed to order since it opened several years ago on South Elliot Road.&lt;/p&gt;

 <title>Oro restaurant in downtown Raleigh to open Sunday night</title>

&lt;p&gt;I got to walk through Oro yesterday afternoon with co-owner Cara Zalcberg Hylton. I have to say it is beautiful inside: sleek white leather chairs, a 17-foot wooden wine carousel in one corner and two huge light fixtures dangling from the ceiling that dominate the space. The lights are these bronze cylinders decorated with circles. (I can&amp;#39;t do them justice so go to the restaurant&amp;#39;s &lt;a href=&quot;http://ororaleigh.com/&quot;&gt;website and there are photos on the front page&lt;/a&gt;.)&lt;/p&gt;

&lt;p&gt;The restaurant is for evenings when &amp;quot;you want to feel like you are in a big city but with Raleigh prices,&amp;quot; says Cara Zalcberg Hylton.&amp;nbsp;&lt;/p&gt;
&lt;p&gt;They offer six local beers on tap and 16 wines on tap. The wines on tap allows you to &amp;quot;taste wine that you wouldn&amp;#39;t otherwise buy by the bottle,&amp;quot; she says.&lt;/p&gt;
&lt;p&gt;Hylton&amp;#39;s husband, Chris, is the chef and worked most recently at The Mint restaurant, which has since closed in downtown Raleigh.  <title>Occupational hazards</title>

 <description>&lt;p&gt;I cooked with -- and feasted on -- whole milk and real butter Sunday on behalf of fans of our Wednesday food section.&lt;/p&gt;
&lt;p&gt;You see, food writer Andrea Weigl and I are testing macaroni and cheese recipes we solicited from readers. We&amp;#39;re making sure the winning entry is yummy!&lt;/p&gt;
&lt;p&gt;On Sunday, I made a decadent version of mac and cheese with tons of Jarlsberg and a bechamel sauce. Dirtied more bowls and pans than I care to count. And downed too many heaping spoonsful trying to accurately discern whether it was the thyme or the nutmeg that made this dish special.&lt;/p&gt;
&lt;p&gt;This was my second mac and cheese recipe-replicating experiment for the contest, and I followed the instructions to the letter, using whole milk, high-fat cheese and butter instead of the skim milk, low-fat cheese and cooking spray that are staples in my kitchen.&lt;/p&gt;
&lt;p&gt;Weight-loss tips lists often recommend low-fat, no-fat, sugar-free alternatives to real food. But recipe testing reminded me that I long ago squeezed all the benefit I could out of such lower-calorie ingredients, and anyway, they seem to be the subject of much debate. Some research has suggested that, for instance, the sugar substitutes in soda make you crave other food and drink that will pile on the pounds. And some critics say that no matter how caloric, natural food trumps faux.&lt;/p&gt;
&lt;p&gt;No matter what, if there is a speck of fat in the recipe, it will find its way efficiently to my hips and thighs if I don&amp;#39;t work it off just as efficiently.&lt;/p&gt;
&lt;p&gt;The recipe testing will continue. With small spoons (and walking shoes).&lt;/p&gt;

 <title>Another week of strawberries: make ice cream</title>

 <description>&lt;p&gt;Farmers at the State Farmer&amp;#39;s Market in Raleigh are predicting about one more week of strawberries. So when you head out to get your last pints or buckets of strawberries, consider making strawberry ice cream.&lt;/p&gt;
&lt;p&gt;Bill Garrabrant, 80, of Raleigh, invited me over to his Raleigh home last week to taste some of his strawberry ice cream. It was delicious. No wonder Garrabrant&amp;#39;s ice cream recipe was featured in a 1976 story in The Raleigh Times. His recipe requires an ice cream maker but it&amp;#39;s fairly simple and easy to make.&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Here are Garrabrant&amp;#39;s instructions: Remove stems and slice three pints of strawberries. Place in a bowl with 2 1/4 cups of sugar and let sit for a hour until sugar dissolves. Place sugared berries and juice in the blender and puree until smooth. Pour strawberry puree, three pints of half-and-half and 1 tablespoon vanilla into your ice cream maker. Make ice cream, per your machine&amp;#39;s instructions.&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Garrabrant&amp;#39;s only adaptation is for peach ice cream: substitute five pounds peaches for the berries and a dash of almond extract for the vanilla.&lt;/p&gt;
