Glazed Chicken with Corn Relish
1/2 cup orange marmalade
1 teaspoon grated zest and 2 tablespoons juice from one orange
1 1/2 teaspoons minced chipotle chiles in adobo sauce
4 chicken breasts, about 3 pounds
1 tablespoon vegetable oil
1 16-ounce frozen corn, thawed
1/4 cup fresh cilantro, chopped
3 scallions, sliced thin
Combine marmalade, orange zest, orange juice and chipotle chiles in bowl and set aside. Pat chicken dry with paper towels and season with salt and pepper. Heat oil in a large skillet over medium-high heat until just smoking. Cook chicken, skin side down, until well browned, about 5 minutes. Reduce heat to medium and continue to cook, covered, until meat registers 160 degrees, about 15 minutes. Transfer chicken to plate and tent with foil.
Pour off all but 1 tablespoon fat from skillet. Add corn and cook until lightly browned, about 5 minutes. Transfer corn to bowl, stir in cilantro and scallions, and season with salt and pepper.
Add marmalade mixture and any accumulated chicken juices to skillet, scraping up any browned bits, and cook until thickened, about 4 minutes. Spoon glaze over chicken. Serve with corn relish.
