Frugal Feasts: Crockpot Beef and Noodles
The beef and noodles recipe is so tasty and the crockpot does most of the work. It is a cross between a beef stew (with carrots and mushrooms) and a beef stroganoff (with a delicious sour cream gravy). I love the boneless eye of round cut because it is incredibly tender when cooked in the crockpot. Plus, it is on sale often for $1.99 per lb. at Lowes Foods and Harris Teeter. London broil and beef stew meat work just as well with this recipe. I have served this many times for guests and it’s always a hit. Serve with rolls and a salad and you have a wonderful meal.
2-2.5 lb. boneless eye of round roast
4 oz. mushrooms – halved
3 carrots, peeled and sliced
1/2 chopped or sliced onion
2 cloves garlic -- minced
1 teaspoon dried oregano or Italian spice mix
1/2 teaspoon black pepper
1 bay leaf
1 1/2 cup low sodium beef broth
8 ounces sour cream
1/2 cup all-purpose flour
1/4 cup water
1 12 oz bag egg noodles, cooked
Place roast in crockpot (after removing excess fat). Add mushrooms, carrots, onion, garlic, oregano, pepper, and bay leaf in slow cooker. Pour in beef broth. Cover and cook on LOW 8 to 9 hours or on HIGH 4 to 5 hours.
Remove and discard bay leaf. Remove roast and place on cutting board. If cooking on LOW, turn to HIGH. Stir together sour cream, flour and water in small bowl. Stir about 1 cup liquid from slow cooker into sour cream mixture. Stir sour cream mixture back into slow cooker. Cut beef into chunks and return to crockpot. Cover and cook on HIGH 20 minutes or until gravy is thickened. Serve over noodles. Makes 6-8 servings.

Total cost for entire dish: $7.71
This dish lasts 2 meals for our family of 4 so ½ goes into the freezer after it cools.
