Sara Foster's recipe for Carolina Rice Pudding Brulee

This recipe is from Foster's new book, "Sara Foster's Southern Kitchen." Check out my interview with her in today's paper.

Carolina Rice Pudding Brûlée

Humble rice pudding gets a serious makeover with the addition of flavorful, fat-grained Carolina Gold rice and a glassy, sugared brûlée crust. From "Sara Foster's Southern Kitchen: Soulful, Traditional, Seasonal," by Sara Foster (Random House, 2011).

Cooking spray or melted butter
3 cups milk
3/4 cup Carolina Gold or other long-grain white rice
1 vanilla bean, split lengthwise, seeds scraped and reserved
1 teaspoon kosher salt
1 cup heavy cream
1/2 cup granulated sugar
4 large egg yolks
2 tablespoons unsalted butter
1/2 teaspoon freshly grated nutmeg
Pinch of ground cloves
6 tablespoons natural cane sugar or granulated sugar
PREHEAT oven to 350 degrees. Lightly grease six 4-ounce ramekins and place on a rimmed baking sheet.
BRING milk, rice, vanilla bean and reserved seeds and salt to a low simmer over medium heat in a heavy-bottomed saucepan over medium heat. Raise the heat to medium and cook, uncovered, stirring occasionally, until the rice is tender and the mixture is thick and creamy, 20 to 25 minutes. Remove from the heat and discard the vanilla bean.
ADD heavy cream and granulated sugar and stir until the sugar dissolves. Cool slightly, then stir in the egg yolks, butter, nutmeg, and cloves.
DIVIDE pudding evenly between the prepared ramekins and bake for about 10 minutes, until slightly puffed but still soft in the center. Remove from the oven.
PREHEAT broiler or prepare a small kitchen torch. Sprinkle each pudding evenly with about 1 tablespoon of the natural cane sugar. If using a broiler, place under the broiler in the upper third of the oven until the sugar caramelizes, rotating the baking sheet to evenly brown, 1 to 2 minutes. If using a kitchen torch, torch each pudding individually to caramelize the sugar, being careful to keep the torch at the distance recommended by the manufacturer. Serve warm.

6 (4-ounce) servings

The cost varies because you pay for your plate by the pound. Wine costs $4 a glass, and domestic beers cost $2.

Heirloom tomato celebrations

Several Triangle restaurants are celebrating heirloom tomato season with special dinners. Here are three that might interest you:

At 7 p.m. Thursday, July 8, Foster's Market in Chapel Hill is offering one of its farm dinners, which happen every other Thursday at that location. The family-style meal will feature heirloom tomatoes from Peregrine Farm in Alamance County. It costs $15 for adults, $7 for children. (Owner Sara Foster encourages parents to bring their children and noted that accomodations will be made for children who don't like the tomato-centric menu.) The menu includes a tomato plate with three different heirloom varieties, shrimp and pasta al fresca with focaccia and melon ambrosia. Walk-ins are welcome. Reservations are encouraged: 967-3663. The store is located at 750 Martin Luther King Jr. Blvd.

Raleigh's Zely & Ritz restaurant has made a tradition of heirloom tomato dinners. Last year, demand was so high that they ended up hosting seven such events. So far, they three dates chosen: July 20 and 28 and Aug. 3. Call 828-0018 for details and reservations.

Raleigh's 18 Seaboard is hosting heirloom tomato wine dinners at 7 p.m. July 26 and 27. It costs $45 per person plus tax and tip. The menu includes a sampling of heirloom tomatoes and cheese, bibb salad with green zebra tomatoes and sprite melons, grilled filet mignon with tomato terrine, corn, potatoes and a warm heirloom tomato gazpacho and an upside-down sungold tomato and pineapple cake with honey-basil ice cream. Call 861-4318 for a reservation.

Family-style dinner TONIGHT at Foster's Market

Chapel Hill's Foster's Market at 7 p.m. tonight for a family-style dinner featuring produce and pasture-raised meat from Brinkley Farms in Creedmoor. 

It costs $25 for adults and $10 for children.

Here is the menu:

  • Relish tray
  • Cool cucumber gazpacho
  • Mixed grilled pasture-raised pork and brats
  • Wax and green beans marinated in mustard seeds and lemon peel
  • Warm grilled corn and summer squash
  • Sweet biscuits with blackberries and peaches topped with softly whipped cream
