Durham's Piedmont hires new chef

Durham's Piedmont Restaurant has hired Jeffrey Satterly, the former executive chef at Frazier's in Raleigh, as its new chef de cuisine.

Chef Marco Shaw, who helped Eno Hospitality Group take over Piedmont from its original owners, will help Satterly during the transition in July. The press release says Shaw "is moving on to spend more time with his family and begin work on new projects."

Eno Hospitality Group owns Piedmont, Zely & Ritz in Raleigh and Coon Rock Farm.

Satterly graduated from Johnson & Wales in 1995, worked at the Woodlands Resort & Inn in Summerville, S.C., Lespinasse in Washington, D.C., as chef de cuisinse at Carolina Crossroads at The Carolina Inn in Chapel Hill and as sous chef at Herons at The Umstead Hotel and Spa in Cary. In 2007, Satterly became the executive chef at Frazier's, which recently closed.

The press release says Satterly's resume includes "stints at The French Laundry with Thomas Keller, Bouchon Bakery, The Mansions Las Vegas, Restaurant Gordon Ramsay, and Aquarelle." (To see the bio released with the press release, it is attached below.)

Frazier's, a Hillsborough Street dining destination in Raleigh, has closed

I got word Saturday night via Greg Cox, our restaurant critic, that Frazier's has closed.

Kevin and Stacey Jennings, owners of Urban Food Group, a local restaurant company, sent a note to Cox late Saturday night. The note from Kevin Jennings' phone read: "I'm going down to Frazier's to close it for good.We will miss that place terribly."

Frazier's was the Jennings' first restaurant in Raleigh. As a young couple, they created a dining destination on Raleigh's Hillsborough Street when there wasn't much else there for grown-ups. It was a favorite among the people who lived in the neighborhoods close to N.C. State University. The couple's flagship restaurant had faltered in recent years as the city's dining scene exploded on Glenwood South and in downtown Raleigh. Most recently, the couple had transformed Frazier's into a wine bar.

The Jennings also own Porter's Tavern, Coquette, Chow and two locations of Vivace, one in Charlotte and the other in Raleigh. 

UPDATE: I got Kevin Jennings on the phone this afternoon. After 14 years, he said, business was down and they decided to put the restaurant up for sale six months ago. Jennings says the owners of Klara's, a Czech restaurant in Cary, have bought the business. (No word yet on their plans.)

Jennings explained that they plan to focus on opening locations of Vivace in Denver, Washington, D.C. and Durham. For the Durham location, they have had "initial talks" with the folks behind Diamond View III, at the Durham Bulls ballpark and American Tobacco.

Seats still available for wine dinner Monday at Frazier's

Frazier's Wine Bar is offering a four-course wine dinner at 6:30 p.m. Monday featuring wines from Bethel Heights Winery in the Willamette Valley of Oregon. It costs $55.

Here is the menu:

  • Salmon tartare with roasted beet relish, Polish mustard, creme fraiche, dill and potatoes paired with the 2010 Pinot Gris.
  • Roasted pork loin with braised pumpkin, spinach, apricot and thyme paired with the 2008 Estate Chardonnay.
  • Pan-seared venison with cannellini beans, spaghetti squash and a brandy peppercorn cream sauce paired with 2009 Estate Pinot Noir and the 2008 Justice Single Vineyard Pinot Noir.
  • Baked brie with blackberry preserves and fresh blueberries paired with the 2010 Pinot Blanc.

The girl's parents, Alfonzo and Elena, along with several other family members, have been long-time employees of Urban Food Group's restaurants, according to a company press release. On Saturday, the company’s service staff has agreed to donate some or all of their tips and wages to the family.
